A creamy and flavorful pasta dish featuring tender chicken, fresh spinach, and sun-dried tomatoes.

  • 2 juicy chicken breasts, sliced
  • 8 oz of your favorite pasta, cooked
  • 2 cups of fresh spinach
  • 1/2 cup of sun-dried tomatoes, packed in oil
  • 3 cloves of garlic, minced
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Begin by bringing a large pot of salted water to a rolling boil. Cook the pasta until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the sliced chicken with salt and pepper, cooking for about 6-7 minutes until golden brown. Remove and set aside.
  3. Add minced garlic to the skillet, letting it sizzle for about a minute, then stir in sun-dried tomatoes and fresh spinach.
  4. Pour in heavy cream, allowing it to swirl with the ingredients. Bring to a gentle simmer and mix in grated Parmesan cheese.
  5. Combine the cooked pasta and sautéed chicken with the sauce, tossing to coat evenly.
  6. Garnish with fresh basil and extra Parmesan cheese. Serve immediately.

Notes

For a lighter option, substitute heavy cream with Greek yogurt. You can also use whole grain or gluten-free pasta.
