  • 1 pound Skirt Steak, diced into 1-inch pieces
  • 1 Tbsp Vegetable Oil
  • 2 Tbsp Taco Seasoning
  • 1 Red Bell Pepper, diced
  • 1 Yellow Onion, diced
  • 1/4 cup Salsa
  • 1 1/2 cups Cheddar Cheese, shredded
  • 1 1/2 cups Monterey Jack Cheese, shredded
  • 4 Flour Tortillas, burrito size

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the diced skirt steak in an even layer, then sprinkle generously with taco seasoning.
  2. Sauté the steak for 1 to 2 minutes on each side until it’s browned but not overcooked.
  3. Add the diced red bell pepper and onions to the skillet, stirring them together. Sauté for about 5 to 7 minutes until the vegetables soften.
  4. Pour in the salsa and toss the steak and vegetables until everything is nicely coated. Sauté for an additional couple of minutes.
  5. Remove the skillet from heat and preheat a griddle over medium-high heat.
  6. Place the flour tortillas on the hot griddle. On each tortilla, sprinkle some cheddar and Monterey Jack cheese, then pile on the steak mixture. Add more cheese on top.
  7. Fold each tortilla in half to form a half-moon shape and press slightly to seal.
  8. Cook the quesadillas until one side is golden brown (about 1 to 2 minutes), then flip and repeat.
  9. Remove the quesadillas from the skillet, slice into wedges, and serve warm.

Notes

For best flavor, let the steak marinate for a couple of hours or overnight. Ensure all ingredients, especially cheeses, are at room temperature for better melting.
