  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 tbsp all-purpose flour
  • 1 1/2 cups fresh strawberries, diced
  • 1/4 cup granulated sugar (for strawberries)
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a medium bowl.
  3. Press the mixture into the bottom of a greased 9×13-inch baking pan.
  4. Beat the softened cream cheese with 1 cup of sugar until smooth and creamy.
  5. Add the eggs one at a time, mixing thoroughly after each addition.
  6. Stir in the vanilla extract, sour cream, and flour.
  7. Pour the creamy filling over the crust and spread it evenly.
  8. Bake for 30-35 minutes, or until set but slightly jiggly in the center.
  9. Remove from the oven and let cool for 30 minutes, then refrigerate for at least 2 hours.
  10. Combine diced strawberries, 1/4 cup sugar, and lemon juice in a saucepan; cook until thickened.
  11. Spread the strawberry topping over the chilled cheesecake bars.
  12. Slice into squares, serve cold, and enjoy!
