Delightful bite-sized treats featuring a buttery graham cracker crust filled with creamy cheesecake, topped with fresh strawberries and crunchy cornflakes.

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/2 cup fresh strawberries, chopped
  • 1 cup crushed cornflakes
  • 1/4 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl.
  3. Press the mixture into mini muffin tins or silicone molds to form crusts.
  4. Bake for about 8 minutes until golden and fragrant.
  5. Allow crusts to cool completely.
  6. Beat the softened cream cheese in a bowl until smooth.
  7. Add powdered sugar, vanilla extract, and sour cream; mix until smooth.
  8. Fill each cooled crust with the cheesecake mixture generously.
  9. Toss chopped strawberries with crushed cornflakes until well-coated.
  10. Spoon the mixture over the cheesecake filling in each cup.
  11. Optional: Melt white chocolate chips and drizzle over the crunch mixture.
  12. Chill in the refrigerator for at least 2 hours before serving.

Notes

Make sure the cream cheese is at room temperature for easy blending. Adjust sweetness as desired, and consider using colorful cupcake liners for serving.
