Delightful bite-sized dessert combines creamy cheesecake with crunchy textures and fresh strawberries.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup granola or crushed cereal
  • 1/4 cup chopped pecans (optional)
  • 1 1/2 cups fresh strawberries, diced
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press it firmly into the muffin wells until each base is smooth and even. Bake for 5-7 minutes until golden brown, then allow them to cool completely.
  3. Beat the softened cream cheese, powdered sugar, and vanilla extract until creamy and smooth. Mix in the sour cream until fully incorporated.
  4. Spoon the cream cheese filling into the cooled crusts, smoothing the tops with a spatula.
  5. Mix together granola, pecans, and melted butter in a separate bowl. Sprinkle this mixture generously over each cheesecake bite.
  6. Place the mini muffin tin back into the oven and bake again for 8-10 minutes until golden and set.
  7. Toss the diced strawberries with 2 tablespoons of sugar and set aside to enhance their sweetness.
  8. Adorn each bite with the strawberry topping just before serving.
  9. Store leftovers in an airtight container in the fridge for up to three days.

Notes

Press the crust firmly to avoid crumbling and allow cooling to enhance flavor.
