Delightful fusion of sweetness and crunch, these bite-sized treats combine creamy cheesecake with fresh strawberries and a crunchy cornflake topping.

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/2 cup fresh strawberries, chopped
  • 1 cup crushed cornflakes
  • 1/4 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, sugar, and melted butter in a mixing bowl.
  3. Press this mixture into mini muffin tins, forming small crusts.
  4. Bake for about 8 minutes until golden.
  5. Beat the softened cream cheese until smooth in a medium bowl.
  6. Add powdered sugar, vanilla extract, and sour cream; mix until creamy.
  7. Fill each cooled crust with the cheesecake mixture.
  8. Combine chopped strawberries and crushed cornflakes in a separate bowl.
  9. Spoon the strawberry mixture over the cheesecake filling.
  10. Drizzle melted white chocolate on top if using.
  11. Chill in the refrigerator for at least 2 hours before serving.
