  • 2 1/4 tsp active dry yeast
  • 3/4 cup warm milk
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 3 cups all-purpose flour
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 tbsp sugar
  • 1 tsp lemon juice
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp milk (for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Activate the yeast by dissolving it in warm milk mixed with granulated sugar. Let it sit for about 5 minutes, until frothy.
  2. Combine the melted butter, egg, and salt in a large mixing bowl. Stir in the yeast mixture until fully integrated. Gradually add flour, one cup at a time, stirring until a soft dough forms.
  3. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
  4. Prepare the cheesecake filling by beating together cream cheese, powdered sugar, heavy cream, and vanilla until smooth.
  5. Combine the chopped strawberries, sugar, and lemon juice in a small bowl and let macerate for 15 minutes.
  6. Roll the risen dough into a large rectangle. Spread cheesecake filling evenly over the surface, then roll tightly to create a log. Slice into 12 pieces.
  7. Place the rolls in a greased baking dish, cover, and let rise for another 30 minutes while preheating the oven to 350°F (175°C).
  8. Bake for 20-25 minutes until golden brown.
  9. Whisk together powdered sugar, milk, and vanilla until smooth for the glaze.
  10. Drizzle warm rolls with glaze and top with macerated strawberries. Serve immediately.

Notes

Allow dough to rise properly for the best texture. You can prepare dough in advance and let it rise in the fridge overnight.
