  • 1 1/2 cups crushed chocolate cookies
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup melted dark chocolate
  • 1/2 cup strawberry purée

Instructions

  1. Prepare the crust: mix the crushed chocolate cookies with the melted butter until well combined. Press this mixture firmly into the bottom of a springform pan, forming an even layer. Chill the crust in the refrigerator while you prepare the filling.
  2. Beat the softened cream cheese with the sugar in a large mixing bowl until the mixture is smooth and creamy. Add the eggs one at a time, mixing well after each addition to incorporate them fully. Stir in the vanilla extract for added flavor.
  3. Divide the filling into two bowls. In one bowl, gently fold in the melted dark chocolate until evenly mixed. In the second bowl, incorporate the strawberry purée.
  4. Alternate dollops of both the chocolate and strawberry mixtures onto the prepared crust. Swirl them together with a knife or skewer to create marbled patterns.
  5. Bake the cheesecake in a preheated oven at 325°F (160°C) for 40-45 minutes. The center should be set, but still slightly jiggly when you take it out.
  6. Let the cheesecake sit at room temperature for a while. Then, refrigerate it for at least four hours (or ideally overnight) to set completely.

Ensure cream cheese and eggs are at room temperature for a smooth mixture. Be cautious not to overmix to prevent air bubbles.
