Delightful cookies with a blend of soft, buttery goodness topped with luscious strawberry frosting and maraschino cherries.

  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon almond extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup maraschino cherry juice
  • 1/2 cup chopped maraschino cherries
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 23 tablespoons strawberry puree (or jam)
  • 1/2 teaspoon vanilla extract
  • Pink food coloring (optional)
  • Halved maraschino cherries or diced strawberries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and almond extract, mixing until fully combined.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, stirring until well combined.
  6. Fold in the maraschino cherry juice and chopped cherries until smooth.
  7. Form tablespoon-sized balls of dough and place them on the baking sheet, flattening each slightly.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Cool completely on a wire rack before frosting.
  10. Beat together the softened butter and powdered sugar for the frosting until smooth.
  11. Add the strawberry puree and vanilla extract, whipping until fluffy.
  12. Spread frosting on each cookie and top with halved cherries or diced strawberries.

Notes

For a more vibrant frosting, incorporate a few drops of pink food coloring. Consider adding lemon juice for a citrusy zest.
