  • 1 large egg
  • 1/2 teaspoon almond extract
  • 1 1/2 cups (190 g) all-purpose flour

  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup (80 ml) maraschino cherry juice
  • 1/2 cup (75 g) chopped maraschino cherries
  • 1/2 cup (115 g) unsalted butter, softened (for frosting)
  • 2 cups (250 g) powdered sugar
  • 23 tablespoons strawberry puree or jam
  • 1/2 teaspoon vanilla extract
  • Pink food coloring (optional)
  • Halved maraschino cherries or diced strawberries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and almond extract, mixing until well combined.
  5. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet, mixing until just combined.
  7. Stir in the maraschino cherry juice and chopped cherries.
  8. Drop spoonfuls of cookie dough onto prepared sheets, spacing them 2 inches apart.
  9. Flatten each dough ball slightly for even baking.
  10. Bake for 10-12 minutes until the edges are golden brown.
  11. Cool on baking sheets for a few minutes before transferring to a wire rack.
  12. Beat together butter and powdered sugar for the frosting until smooth.
  13. Add strawberry puree and vanilla extract, mixing until creamy.
  14. Spread frosting generously on cooled cookies and garnish.
