Delightful cookies bringing together the sweetness of strawberries and the indulgence of chocolate, featuring a strawberry jam center topped with a chocolate truffle.

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons strawberry gelatin powder
  • 2 tablespoons milk
  • 1/2 cup strawberry jam
  • 20 chocolate truffle candies
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the egg, vanilla extract, and almond extract (if using), and mix until fully combined.
  4. Whisk together the flour, baking powder, salt, and strawberry gelatin powder in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until a dough forms.
  6. Roll the dough into tablespoon-sized balls and place them on a lined baking sheet, spaced about 2 inches apart.
  7. Make an indentation in the center of each cookie using your thumb or the back of a spoon.
  8. Fill each indentation with a small spoonful of strawberry jam.
  9. Nestle a chocolate truffle candy into the center of the jam.
  10. Bake for 10-12 minutes or until edges are lightly golden.
  11. Remove from oven, cool for a few minutes on the baking sheet, then transfer to a wire rack to cool completely.
  12. Dust with powdered sugar before serving.

Notes

For a chewier texture, chill the dough for 30 minutes before rolling into balls. Experiment with flavors by substituting extracts, adding more jam, or incorporating nuts.
