  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1/3 cup powdered sugar

  • 1/2 cup heavy whipping cream
  • 2 cups fresh strawberries, hulled and chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon unflavored gelatin
  • 2 tablespoons water
  • 1 cup heavy whipping cream, chilled
  • 2 tablespoons powdered sugar
  • Fresh strawberries for topping
  • Whipped cream for topping
  • Strawberry glaze (optional)

Instructions

  1. Prepare the crust: In a bowl, combine the graham cracker crumbs, sugar, and melted butter until mixture resembles wet sand. Press into the bottom of a springform pan and chill for 15 minutes.
  2. Make the cream cheese layer: Beat softened cream cheese with powdered sugar and vanilla extract until smooth. Whip heavy cream to stiff peaks and fold into the cream cheese mixture. Spread evenly over chilled crust.
  3. Cook the strawberries: Combine chopped strawberries with granulated sugar and lemon juice in a saucepan and simmer for 6-8 minutes until broken down. Blend to a puree and cool.
  4. Bloom the gelatin: Mix unflavored gelatin with water and let it bloom. Heat until dissolved, then stir into cooled strawberry puree.
  5. Make the mousse: Whip chilled heavy cream with powdered sugar until soft peaks form. Gently fold into the strawberry mixture until combined.
  6. Assemble the cake: Pour mousse over cream cheese layer, smooth with a spatula and refrigerate for at least 4 hours or overnight.
  7. Garnish before serving: Decorate with fresh strawberries, whipped cream, and optional strawberry glaze.

Notes

For best results, ensure cream cheese is softened, and allow adequate chilling time for the mousse to set.
