  • 1/2 cup fresh strawberries, pureed
  • Red food coloring (optional)
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup freeze-dried strawberry powder
  • 1/4 cup white chocolate chips or crumbles (optional)
  • Fresh strawberries (for decoration)
  • Red edible pearls or sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans generously.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract.
  4. Gradually add dry ingredients to the bowl, alternating with milk, mixing just until combined.
  5. Gently fold in the pureed strawberries and red food coloring if using.
  6. Divide the batter evenly between prepared cake pans and bake for 25-30 minutes. Cool for 10 minutes, then transfer to a wire rack.
  7. In a large bowl, beat heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
  8. Divide the whipped frosting into three bowls, adding strawberry powder to one for a light pink hue.
  9. Layer the cooled cakes, frosting between layers, and use the ombre frosting for the top layer.
  10. Decorate with white chocolate crumbles, fresh strawberries, and red edible pearls.
