Ingredients

  • 1/2 cup pineapple chunks
  • 1/2 cup coconut cream
  • 1 tablespoon lime juice
  • 12 tablespoons honey or sugar (optional)
  • Ice cubes
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons coconut cream (for frosting)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Add hulled strawberries and pineapple chunks to a blender.
  2. Pour in coconut cream and lime juice.
  3. Blend until smooth and creamy.
  4. Add ice cubes and blend again until desired consistency is reached.
  5. In a mixing bowl, beat softened butter until creamy.
  6. Gradually add powdered sugar and beat until fluffy.
  7. Add coconut cream, vanilla extract, and salt, mixing until smooth.
  8. Pour the piña colada mixture into glasses and top with frosting.
  9. Garnish with fresh strawberry or pineapple slice.
  10. Serve immediately.
