A refreshing and delightful homemade ice cream made with fresh strawberries, rich creaminess, and a hint of vanilla.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry puree

Instructions

  1. In a medium-sized bowl, combine the sliced strawberries, 1/2 cup granulated sugar, and 1 tablespoon lemon juice. Stir gently and let sit for 10-15 minutes.
  2. Once the strawberries have softened, mash them with a fork or blend for a smoother consistency. Set aside.
  3. In a separate bowl, whisk together the heavy cream, 1 cup whole milk, 3/4 cup granulated sugar, and 1 teaspoon vanilla extract.
  4. Add the prepared strawberry puree to the cream mixture and stir gently to combine.
  5. Pour the mixture into an ice cream maker and churn until it reaches a soft-serve consistency, about 20-25 minutes.
  6. Once churned, transfer the ice cream to an airtight container and freeze for at least 4 hours until firm.
  7. When ready to serve, scoop into bowls and enjoy!

Notes

For extra flavor, swirl in whole strawberry pieces or use freeze-dried strawberry powder.
