2 cups fresh strawberries, hulled and sliced
1/2 cup granulated sugar
1 tablespoon lemon juice
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup strawberry puree
Instructions
In a medium-sized bowl, combine the sliced strawberries, 1/2 cup granulated sugar, and 1 tablespoon lemon juice. Stir gently and let sit for 10-15 minutes.
Once the strawberries have softened, mash them with a fork or blend for a smoother consistency. Set aside.
In a separate bowl, whisk together the heavy cream, 1 cup whole milk, 3/4 cup granulated sugar, and 1 teaspoon vanilla extract.
Add the prepared strawberry puree to the cream mixture and stir gently to combine.
Pour the mixture into an ice cream maker and churn until it reaches a soft-serve consistency, about 20-25 minutes.
Once churned, transfer the ice cream to an airtight container and freeze for at least 4 hours until firm.
When ready to serve, scoop into bowls and enjoy!
