A mouthwatering dessert combining creamy cheesecake and fresh strawberries over a buttery shortbread crust, perfect for any occasion.

  • 1 1/2 cups crushed shortbread cookies
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1 1/2 cups fresh strawberries, sliced
  • 2 tbsp sugar
  • 1 tsp lemon juice

Instructions

  1. Make the crust: Mix the crushed shortbread cookies with the melted butter and press into the bottom of a springform pan. Chill in the refrigerator while preparing the filling.
  2. Prepare the filling: Beat the cream cheese, sugar, and vanilla extract in a mixing bowl until smooth. Add the eggs one at a time, mixing well. Fold in the sour cream and heavy cream.
  3. Bake the cheesecake: Pour the filling over the chilled crust and bake in a preheated oven at 325°F (160°C) for 50-55 minutes. Cool and refrigerate for at least 240 minutes.
  4. Prepare the topping: Slice the strawberries and combine with sugar and lemon juice. Let sit for 30 minutes.
  5. Top the cheesecake: Spoon the strawberry mixture over the cheesecake just before serving.

Notes

Ensure cream cheese is softened to avoid lumps. Allow adequate chilling time for the cheesecake to set properly.
