  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup freeze-dried strawberries, crushed
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 cup strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the all-purpose flour, baking soda, and salt.
  3. Beat the softened butter and brown sugar until fluffy.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture and blend until a smooth dough forms.
  6. Fold in the crushed freeze-dried strawberries gently.
  7. Beat the cream cheese, powdered sugar, and extra vanilla extract until smooth.
  8. Scoop a portion of cookie dough and flatten it in your palm.
  9. Place a spoonful of cheesecake mixture in the center and add a dollop of strawberry jam.
  10. Fold the dough around the filling and place it on a baking sheet.
  11. Bake for 10-12 minutes until the edges are golden brown.
  12. Allow to cool on a wire rack before serving.
