Delightful cookies filled with a creamy cheesecake center and bursting with strawberry flavor.

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup freeze-dried strawberries, crushed
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 cup strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the all-purpose flour, baking soda, and salt in a mixing bowl.
  3. Beat together the softened butter and brown sugar until fluffy.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, blending until a smooth dough forms.
  6. Fold in the crushed freeze-dried strawberries.
  7. In a separate bowl, beat the cream cheese, powdered sugar, and additional vanilla extract until smooth.
  8. Scoop a portion of cookie dough and flatten it into a circle.
  9. Place a spoonful of the cheesecake mixture in the center, followed by a dollop of strawberry jam.
  10. Fold the dough around the filling and place on a baking sheet.
  11. Bake for 10-12 minutes until golden around the edges.
  12. Allow to cool on a wire rack before serving.

Notes

Measure your flour correctly and allow the butter to reach room temperature for optimal texture.
