  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup strawberry puree (fresh or frozen strawberries blended)
  • 2 tablespoons sugar (for the strawberry swirl)
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix graham cracker crumbs, 1/4 cup of sugar, and melted butter in a medium bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. Bake for 10 minutes and let cool.
  5. Beat the softened cream cheese until smooth in a large mixing bowl.
  6. Add 1 cup of granulated sugar and vanilla extract, continuing to beat until silky.
  7. Incorporate the eggs one at a time, blending each before adding the next.
  8. Stir in sour cream until smooth.
  9. Mix strawberry puree with 2 tablespoons of sugar and lemon juice in a separate bowl.
  10. Pour the cream cheese mixture over the cooled crust and smooth it out.
  11. Dollop strawberry puree over the batter and swirl using a toothpick.
  12. Bake for 55 to 60 minutes, until the center is set but slightly jiggly.
  13. Turn off the oven and let the cheesecake cool inside for 1 hour.
  14. Chill in the refrigerator for at least 4 hours or overnight before serving.
