  • 1/4 cup sugar (for crust)
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar (for filling)
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 tablespoons red velvet cake mix
  • 2 cups fresh strawberries, sliced
  • 1/4 cup sugar (for topping)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter in a bowl. Press into a 9-inch springform pan. Bake for 8-10 minutes until golden brown. Let cool.
  2. Beat the softened cream cheese until smooth. Add sugar and vanilla, mixing well. Incorporate the eggs one at a time, then mix in sour cream and red velvet cake mix until smooth.
  3. Pour the cheesecake filling over the cooled crust and bake for 50-60 minutes until edges are set and center is slightly jiggly. Cool in the oven for about an hour.
  4. Combine sliced strawberries, 1/4 cup sugar, and lemon juice in a bowl. Let sit for 15-20 minutes to create a syrupy topping.
  5. Refrigerate the cheesecake for at least four hours, preferably overnight.
  6. Top the cheesecake with the strawberry mixture before serving.
