  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 3 packages (8 oz each) softened cream cheese
  • 1 cup sour cream
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 1/2 cups fresh strawberries, pureed
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter until the mixture resembles wet sand.
  3. Press the mixture into the bottom of a 9-inch springform pan to form a crust.
  4. Beat the cream cheese until smooth.
  5. Add the sour cream and sugar, mixing well.
  6. Incorporate vanilla extract and eggs one at a time, mixing after each addition.
  7. Add the strawberry puree and cornstarch, beating until fully combined.
  8. Pour the batter over the crust in the springform pan, smoothing the top.
  9. Bake for 55-60 minutes, until the center is set but slightly jiggly.
  10. Turn off the oven and let the cheesecake cool inside for 1 hour.
  11. Transfer to the refrigerator for at least 4 hours or overnight.

Notes
