Sweet Chili Halloumi Wraps

Delightful wraps filled with crispy halloumi and fresh vegetables, drizzled with sweet chili sauce.

Ingredients

  • 8 oz halloumi cheese
  • 24 tortilla wraps
  • 1 red bell pepper
  • 1 cucumber
  • ½ red onion
  • 1–2 lettuce leaves
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon olive oil
  • Optional toppings: avocado, fresh herbs, pickled vegetables

Instructions

  1. Slice the halloumi cheese into ½-inch thick pieces. Heat a skillet over medium heat and add olive oil. Fry halloumi slices for 2–3 minutes on each side until golden brown. Remove from skillet.
  2. Slice the red bell pepper and onion into thin strips, and julienne the cucumber. Tear lettuce leaves into large pieces.
  3. Lay out tortilla wraps and spread sweet chili sauce over each. Layer crispy halloumi and sliced vegetables evenly.
  4. Fold the bottom edge of the wrap over the filling, then the sides towards the center, and roll tightly from the bottom.
  5. Optionally, lightly toast the assembled wraps in the skillet until golden and crispy.
  6. Slice the wraps in half and serve immediately, drizzling extra sweet chili sauce on top.

Notes

Pre-slice veggies and cheese ahead of time to cut down on prep. Experiment with different fillings as desired.
