A delightful bake combining creamy cottage cheese and fresh blueberries, perfect for breakfast or brunch.

  • 1 ½ cups creamy cottage cheese
  • 1 ½ cups fresh blueberries
  • 2 large organic eggs
  • ¼ cup honey
  • 1 tsp pure vanilla extract
  • ½ cup Greek yogurt
  • ¼ cup rolled oats
  • 1 tbsp lemon zest
  • 1 tbsp freshly squeezed lemon juice
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 tbsp melted butter
  • 1 tbsp brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the cottage cheese, eggs, Greek yogurt, honey, and vanilla extract in a large mixing bowl.
  3. Add the lemon zest and lemon juice; stir to combine.
  4. Mix in the rolled oats, baking powder, and salt until well combined.
  5. Fold in the blueberries gently.
  6. Grease a small baking dish with melted butter, then pour the mixture into the dish.
  7. Drizzle remaining melted butter on top and sprinkle with brown sugar.
  8. Bake for 30-35 minutes or until the top is golden brown and a toothpick comes out clean.
  9. Cool for 10-15 minutes before serving warm or at room temperature.

Avoid overmixing the batter once the blueberries are added. For a dairy-free option, use plant-based alternatives for cottage cheese and Greek yogurt.
