  • 1/4 cup sugar
  • 1/4 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 4 large eggs
  • 2 cups dark cherries, pitted and halved
  • 1/4 cup cherry juice
  • 1/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/4 cup dark chocolate shavings

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine the graham cracker crumbs, sugar, and melted butter in a medium bowl until it resembles wet sand.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan and bake for 10 minutes; cool to room temperature.
  4. Beat the softened cream cheese until smooth in a large bowl, then add sour cream, granulated sugar, vanilla extract, and lemon juice, mixing until creamy.
  5. Add eggs one at a time, integrating each thoroughly before the next.
  6. Pour the cheesecake filling over the cooled crust, tapping the pan to release air bubbles.
  7. Bake for 50-60 minutes until the center is set with a slight jiggle.
  8. Cool the cheesecake to room temperature, then refrigerate for at least 4 hours or overnight.
  9. Cook dark cherries and cherry juice in a saucepan over medium heat for 5-7 minutes until softened; cool.
  10. Whip heavy cream and powdered sugar in a mixing bowl until stiff peaks form.
  11. Spread whipped cream over the chilled cheesecake, drizzle with cherry mixture, and sprinkle with dark chocolate shavings.
  12. Slice, serve, and enjoy!
