  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar (for rolling)

Instructions

  2. Line two baking sheets with parchment paper.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract, beating until well combined.
  5. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a separate bowl.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  7. Roll the dough into 1-inch balls and coat in sugar.
  8. Place the dough balls on the baking sheets, flattening slightly with your palm.
  9. Bake for 8-10 minutes, until slightly underbaked.
  10. Allow to cool on the baking sheets for a few minutes before transferring to a wire rack.

Notes

Make sure your butter is softened, not melted, to achieve the right consistency. Avoid over-mixing the dough to maintain a soft texture.
