A vibrant and delicious dish featuring layers of tender teriyaki chicken, creamy avocado, and fluffy rice, perfect for family meals.

  • 1 lb chicken thighs or breast, diced into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch mixed with 1 tbsp water (slurry)
  • 2 cups cooked sushi or jasmine rice
  • 1 large avocado, diced
  • 1 tbsp lime juice
  • 1 tsp sesame seeds
  • 1 tsp chopped green onion

Instructions

  1. Cook the chicken: In a large skillet over medium heat, add diced chicken and cook until browned and cooked through, about 5-7 minutes. Whisk together soy sauce, brown sugar, honey, rice vinegar, garlic, and ginger in a bowl, then pour over the chicken. Allow to simmer for about 3 minutes. Add the cornstarch slurry, stirring until sauce thickens, about 1-2 minutes.
  2. Season the avocado: In a separate bowl, gently toss the diced avocado with lime juice and a pinch of salt.
  3. Assemble the stack: Grease a ring mold or small bowl. Layer cooked rice at the bottom, followed by seasoned avocado, and finish with a spoonful of teriyaki chicken on top.
  4. Top it off: Sprinkle sesame seeds and chopped green onions over the layered stack.
  5. Serve your creation: Carefully lift the mold to reveal your stack. Serve hot and enjoy!

Notes

For variety, swap chicken for tofu or shrimp. Marinate chicken for 30 minutes for enhanced flavor.
