A delightful dish featuring tender scallops seared to perfection, enhanced by fresh Thai basil and a kick of chili, perfect for any dining occasion.

Ingredients

  • 3 tbsp butter
  • 1 lb scallops, defrosted and patted dry
  • 1 tsp salt
  • 1 tsp pepper, freshly cracked
  • 2 tbsp garlic, diced
  • 1/4 cup Thai basil, diced
  • 1 tsp chili paste
  • 1/2 lemon, sliced into half-wedges

Instructions

  1. Heat 3 tablespoons of butter in a pan over high heat until it melts and begins to foam lightly.
  2. Pat the scallops dry with a paper towel and season them generously with salt and freshly cracked pepper.
  3. Once the butter is bubbling, carefully place the scallops in the pan, ensuring they are well spaced apart to avoid overcrowding.
  4. Sear the scallops for about 4 minutes on one side until they develop a lovely golden crust before flipping them over.
  5. Gently flip the scallops over and add the diced garlic and Thai basil to the pan, stirring quickly to avoid burning. Sauté together for about 2-3 minutes until the garlic is lightly browned and fragrant.
  6. Incorporate the lemon slices and chili paste into the mixture, stirring to combine everything.
  7. Cook until the scallops are springy to touch, bright white and opaque, and nicely browned on both sides.
  8. Serve the scallops immediately, topped with the fragrant pan sauce, and garnished with extra Thai basil if desired.

Notes

Ensure scallops are thoroughly dried before cooking for best results. Use high heat to achieve that perfect golden crust.
