Rich brownies infused with coffee flavors and topped with a creamy mascarpone layer, perfect for indulgent gatherings.

Ingredients

  • Unsalted Butter (1 ½ sticks or 170g)
  • Dark Chocolate (9 oz or 255g, chopped)
  • Large Eggs (3)
  • White Sugar (1 ¼ cups or 250g)
  • All-Purpose Flour (1 ¼ cups or 150g)
  • Salt (½ teaspoon)
  • Vanilla Extract (1 teaspoon)
  • Espresso Powder (2 tablespoons)
  • Mascarpone (8 oz or 225g, cold)
  • Heavy Whipping Cream (1 cup or 240ml, cold)
  • Powdered Sugar (6 tablespoons or 45g)
  • Amaretto (¼ cup or 60ml, optional)
  • Cocoa Powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (180°C) or 160°C if using a fan-assisted oven. Line an 8-inch square baking pan with parchment paper.
  2. Melt the unsalted butter and chopped dark chocolate in a heatproof bowl over simmering water or gently in the microwave. Stir until smooth; then let it cool slightly.
  3. Whisk the eggs and white sugar together in a large mixing bowl until thick and pale, about 3-5 minutes.
  4. Stir the cooled chocolate mixture into the egg-sugar mix along with the vanilla extract until smooth.
  5. Dissolve the espresso powder in a splash of hot water, then gently fold this into the brownie batter.
  6. Sift in the flour and salt, folding gently until no dry flour remains.
  7. Pour the batter into the prepared pan, smoothing out the top. Bake for 25-30 minutes.
  8. Whip together the mascarpone, powdered sugar, Amaretto (if using), and vanilla extract until smooth.
  9. Whip the heavy cream until stiff peaks form, then gently fold this into the mascarpone mixture.
  10. Spread the mascarpone cream on top of the cooled brownies.
  11. Dust the top with cocoa powder before cutting into squares.

Notes

For best results, allow the brownies to cool completely before adding the mascarpone layer.
