A warm, comforting dish that blends the rich flavors of ripe tomatoes with cheesy, fluffy cheddar dumplings, perfect for chilly days.

Ingredients

  • 2 cans of crushed tomatoes
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 teaspoon of sugar
  • Salt and pepper to taste
  • 1 cup of flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of butter, melted
  • 1/2 cup of milk
  • Fresh basil for garnish (optional)

Instructions

  1. Heat a large pot over medium heat. Add the diced onion and minced garlic, sautéing until soft and translucent.
  2. Pour in the crushed tomatoes and vegetable broth. Add the sugar, salt, and pepper. Stir to combine and simmer for about 20 minutes.
  3. Combine flour, baking powder, and salt in a bowl. Stir in shredded cheddar cheese.
  4. Add melted butter and milk to the dry ingredients. Mix gently until just combined.
  5. Drop spoonfuls of the dumpling mixture into the simmering soup. Cover and cook for 10-15 minutes until the dumplings are fluffy and cooked through.
  6. Serve in bowls and garnish with fresh basil if desired.

Notes

For deeper flavor, roast the tomatoes before adding them. Experiment with different cheeses or add more veggies for added nutrition.
