A delightful dish combining tender shrimp, vibrant spinach, and a rich creamy sauce that coats pasta. Perfect for a romantic dinner or family gathering.

Ingredients

  • 8 oz pasta (linguine or spaghetti)
  • 1 tbsp olive oil
  • 1 lb shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil, chopped, for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes on each side until pink. Remove shrimp and set aside.
  3. Add minced garlic to the skillet and cook for about a minute until fragrant.
  4. Add cherry tomatoes and cook for 3-4 minutes until softened.
  5. Stir in fresh spinach and cook until wilted.
  6. Pour in heavy cream and bring to a gentle simmer.
  7. Mixer in Parmesan cheese, oregano, salt, and pepper.
  8. Combine cooked pasta and shrimp with the sauce and toss to coat.
  9. Serve garnished with fresh basil.

Notes

For a lighter version, swap heavy cream with Greek yogurt. Ensure shrimp are not overcooked for the best texture.
