  • 1 cup olives (black or green, pitted)
  • 1 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic (minced, optional)
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste
  • 1/4 cup fresh herbs (parsley, basil, or mint, chopped)

Instructions

  1. Begin by cooking your chosen pasta in well-salted water according to the package instructions, stirring occasionally. Once al dente, drain and cool slightly under cold water.
  2. In a large mixing bowl, combine the cooked pasta with pitted olives (halved or whole) and crumbled feta cheese.
  3. In a separate small bowl, whisk together the extra virgin olive oil, minced garlic (if using), fresh lemon juice, salt, and pepper until combined.
  4. Carefully pour the dressing over the pasta mixture and toss gently to coat.
