Delightful gingerbread cookies perfect for holiday celebrations, decorated to resemble a charming winter village.

Ingredients

  • 1 teaspoon baking soda
  • 2 tablespoons ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 pinch salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • 2 large egg whites (for royal icing)
  • 1 1/2 cups powdered sugar (for royal icing)
  • 1/2 teaspoon lemon juice (for royal icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt in a mixing bowl.
  3. Cream the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg, then add the molasses and vanilla extract until smooth.
  5. Gradually mix in the dry ingredients until a cohesive dough forms.
  6. Divide the dough into two portions, wrap in plastic wrap, and chill for at least one hour.
  7. Roll out the dough to 1/4 inch thick on a floured surface.
  8. Cut out shapes using cookie cutters and place them on a baking sheet lined with parchment paper.
  9. Bake for 8-10 minutes until golden brown, then cool on a wire rack.
  10. Beat the egg whites until soft peaks form, then add powdered sugar and lemon juice until stiff peaks form.
  11. Decorate cookies with royal icing and let harden for 1-2 hours before serving.

Notes

Make sure to chill the dough to maintain cookie shape. Keep an eye on them while baking to avoid over-baking.
