  • 1 can (20 oz) crushed pineapple, undrained
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans (optional)
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting
  • 12 tablespoons milk (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13-inch baking dish.
  3. Combine the yellow cake mix, crushed pineapple (with juice), eggs, and vegetable oil in a large bowl. Mix until just combined.
  4. Fold in the shredded coconut and optional chopped pecans until evenly distributed.
  5. Pour the batter into the prepared dish and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cake bakes, prepare the frosting by beating together the softened cream cheese and butter until smooth.
  8. Gradually add the powdered sugar and vanilla extract, mixing until well combined. Adjust consistency with milk if needed.
  9. Once the cake has cooled completely, spread the cream cheese frosting over the top.
