A delightful dessert that combines the sweet essence of pineapple with creamy frosting, evoking images of tropical breezes.

  • 2 cups Granulated Sugar
  • 2 tsp Baking Soda
  • 2 Eggs
  • 1 20-oz. can Crushed Pineapple with Juice
  • 1 cup Chopped Toasted Pecans (optional)
  • 8 ounces Cream Cheese, Softened
  • 1 stick Butter, Softened
  • 2 cups Powdered Sugar
  • 1 tbsp Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs, crushed pineapple (with juice), and toasted chopped pecans in a medium bowl.
  3. Combine the all-purpose flour, granulated sugar, and baking soda in a separate large bowl.
  4. Fold the egg mixture into the dry ingredients until just combined.
  5. Grease a 9×13 inch baking dish and pour the batter into it.
  6. Bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Let the cake cool completely before frosting.
  8. Blend together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  9. Spread the frosting evenly over the cooled cake.

Notes

For extra flavor, toast the pecans before adding them and consider adding shredded coconut to the batter.
