A delightful twist on a classic fall dish, combining creamy sweet potatoes with tart cranberries and sweet apples for a comforting family favorite.

Ingredients

  • 2 large sweet potatoes
  • 1 cup fresh or frozen cranberries
  • 1 juicy apple, diced
  • 2 tablespoons butter
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • Salt, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork to allow steam to escape.
  3. Bake the sweet potatoes for 45-50 minutes until soft.
  4. Melt the butter in a skillet over medium heat.
  5. Add the diced apple, cranberries, nutmeg, cinnamon, and salt; cook for 5-7 minutes.
  6. Stir in the maple syrup and cook for an additional 2 minutes.
  7. Scoop out the flesh of the sweet potatoes and mix it with half of the cranberry-apple filling.
  8. Spoon the mixture back into the potato skins, topping with the remaining filling.
  9. Bake for another 10-12 minutes until heated through.

Notes

For a lighter version, use coconut oil instead of butter. Consider adding black beans or chickpeas for extra protein.
