  • 4 large baking potatoes
  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1/2 cup salsa

Instructions

  1. Preheat your oven to 475°F (245°C). Scrub the baking potatoes under cold water and prick them multiple times with a fork. Bake for 60-75 minutes until soft.
  2. Heat a pan over medium heat. Add ground beef and chopped onion, cooking until the beef is browned and onion is tender.
  3. Stir in taco seasoning and 1/4 cup water, continuing to cook until the mixture thickens.
  4. Cut the baked potatoes in half lengthwise and scoop out the pulp into a mixing bowl.
  5. Mash the pulp with sour cream and milk until creamy. Mix in three-quarters of the beef mixture and cheddar cheese.
  6. Stuff the potato skins with the filling, topping with remaining beef and a sprinkle of cheese. Bake at 350°F (175°C) for 20-25 minutes.
  7. Serve hot, garnished with sliced green onions, sour cream, and salsa.
