4 large baking potatoes
1 pound lean ground beef
1 small onion, chopped
1 packet taco seasoning
1/4 cup water
1/2 cup sour cream
1/4 cup milk
1 cup shredded cheddar cheese
2 green onions, sliced
1/2 cup salsa
Instructions
Preheat your oven to 475°F (245°C). Scrub the baking potatoes under cold water and prick them multiple times with a fork. Bake for 60-75 minutes until soft.
Heat a pan over medium heat. Add ground beef and chopped onion, cooking until the beef is browned and onion is tender.
Stir in taco seasoning and 1/4 cup water, continuing to cook until the mixture thickens.
Cut the baked potatoes in half lengthwise and scoop out the pulp into a mixing bowl.
Mash the pulp with sour cream and milk until creamy. Mix in three-quarters of the beef mixture and cheddar cheese.
Stuff the potato skins with the filling, topping with remaining beef and a sprinkle of cheese. Bake at 350°F (175°C) for 20-25 minutes.
Serve hot, garnished with sliced green onions, sour cream, and salsa.
