A decadent dessert that combines rich chocolate with tart raspberries for a show-stopping treat.

  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh raspberries
  • 1/4 cup sugar (for filling)
  • 1 tbsp lemon juice
  • 1 1/2 cups dark chocolate chips
  • 3/4 cup heavy cream
  • 2 tbsp butter (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch cake pans.
  2. Whisk together the flour, cocoa powder, baking soda, and salt in a mixing bowl.
  3. Cream the butter and sugar in another bowl until light and fluffy. Beat in the eggs one at a time.
  4. Mix in the buttermilk and vanilla extract until combined.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring gently.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean from the center.
  8. Cool the cakes in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
  9. Simmer the raspberries, 1/4 cup sugar, and lemon juice in a saucepan until thickened.
  10. Heat the heavy cream until it simmers, then pour it over the chocolate chips and stir until smooth. Stir in the butter.
  11. Assemble the cake by adding raspberry filling between the layers and pour ganache over the top.
  12. Refrigerate for at least 1 hour before serving.

Notes

For the best results, ensure ingredients are at room temperature and mix gently to keep the cake fluffy. Can be made a day in advance.
