Delightful and vibrant cupcakes perfect for celebrating love on Valentine’s Day with soft, moist cake and creamy vanilla frosting.

  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup milk
  • Red food coloring
  • Vanilla frosting
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with colorful cupcake liners.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream the butter and sugar in a larger bowl with an electric mixer until light and fluffy, about 3 to 4 minutes.
  4. Incorporate the eggs one at a time, beating well after each addition.
  5. Add the vanilla extract and gradually mix in the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  6. Mix until just combined, then add red food coloring to achieve desired shade.
  7. Divide the batter among the muffin cups, filling each about two-thirds full.
  8. Bake for 18 to 20 minutes, or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  10. Frost each cupcake with vanilla frosting and top with sprinkles before serving.

Notes

Use room-temperature butter and eggs for better mixing. Consider adding almond extract or folding in mini chocolate chips for unique flavors.
