Delightful vanilla cupcakes topped with a creamy blush pink buttercream frosting, perfect for any celebration.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup unsalted butter (softened) for frosting
  • 4 cups powdered sugar
  • 2 tsp vanilla extract for frosting
  • 23 tbsp heavy cream
  • A few drops of pink food coloring
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
  3. Beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter-sugar-egg mixture, alternating with the milk.
  6. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Cool the cupcakes completely on a wire rack before frosting.
  9. Beat the softened butter with powdered sugar until smooth and fluffy for the frosting.
  10. Add the vanilla extract, heavy cream, and a pinch of salt to the frosting mixture.
  11. Mix in a few drops of pink food coloring until evenly distributed.
  12. Frost the cooled cupcakes with the pink buttercream, and decorate as desired.

Notes

Use an ice cream scoop for even portioning of the batter.
