  • 1 1/2 cups sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp cocoa powder
  • 2 tbsp pink food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter (for frosting)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them and dusting them with flour.
  2. In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each.
  5. Stir in the vanilla extract and pink food coloring.
  6. Begin to alternate adding the dry mixture and the buttermilk, starting and ending with the dry ingredients.
  7. Mix in the vinegar until the batter is smooth.
  8. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Let the cakes cool completely on a wire rack.
  10. Beat the cream cheese and butter until smooth, then gradually add the powdered sugar and vanilla extract until fluffy.
  11. Frost the cooled cakes generously and stack them.
