A delightful dish featuring juicy roasted cherry tomatoes paired with creamy, whipped feta, perfect as an appetizer or side dish.

Ingredients

  • 2 cups Cherry Tomatoes
  • 1/4 cup Olive Oil
  • 2 Dried Chili Peppers
  • 1 Head of Garlic
  • 1 tsp Salt
  • 4 sprigs Thyme
  • 1 cup Feta Cheese
  • 1/2 cup Greek Yogurt
  • 1 tbsp Honey
  • Fresh Dill, Parsley, and Chives (for garnish)

Instructions

  1. Preheat your oven to 300°F.
  2. Arrange cherry tomatoes in a single layer in a deep, oven-safe dish.
  3. Cut the head of garlic crosswise and add it to the dish with chili peppers and thyme.
  4. Sprinkle salt over everything.
  5. Pour olive oil over the tomatoes.
  6. Bake for 90 minutes until tomatoes are tender.
  7. Blend feta, Greek yogurt, honey, and herbs in a food processor until creamy.
  8. Refrigerate the whipped feta until chilled.
  9. Serve by spreading whipped feta on a plate, top with tomato confit, and drizzle with tomato oil.

Notes

For best flavor, use ripe tomatoes and don’t rush the roasting process.
