A delightful blend of roasted strawberries and creamy whipped ricotta on crusty toast, perfect for brunch or dessert.

Ingredients

  • 1 pint fresh strawberries, hulled and sliced
  • 1 tablespoon honey (for strawberries)
  • 1 teaspoon balsamic vinegar
  • Pinch of salt
  • 1 cup ricotta cheese
  • 1 tablespoon honey (for ricotta)
  • 1/2 teaspoon vanilla extract
  • 4 slices of crusty bread
  • Fresh thyme or basil leaves (optional)
  • Extra honey for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss the strawberries with honey, balsamic vinegar, and a pinch of salt until they’re fully coated.
  3. Spread the strawberries in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 15-20 minutes, stirring halfway through, until the strawberries are syrupy and tender.
  5. Combine the ricotta cheese, honey, and vanilla extract in a separate mixing bowl.
  6. Whip the mixture until it becomes smooth and airy.
  7. Toast the bread slices until they are golden brown and crispy.
  8. Spread a generous amount of whipped ricotta on each slice of toast.
  9. Spoon the roasted strawberries onto the ricotta.
  10. Garnish with fresh thyme or basil leaves and drizzle with extra honey.

Notes

Roast the strawberries in advance and store them in the fridge for up to three days.
