A delightful no-bake dessert that combines creamy cheesecake with raspberry and white chocolate in bite-sized treats.

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup white chocolate chips, melted
  • 1/2 cup crushed graham crackers
  • 1/4 cup raspberry puree
  • 1/2 cup white chocolate chips (for coating)

Instructions

  1. Beat the softened cream cheese and powdered sugar together in a mixing bowl until smooth.
  2. Melt the white chocolate chips over a double boiler or in the microwave, and mix into the creamy mixture.
  3. Stir in the graham cracker crumbs and raspberry puree until thick and fragrant.
  4. Scoop out spoonfuls of the mixture and roll them into balls on a lined baking sheet.
  5. Dip each ball into the melted white chocolate, coating completely, and tap off any excess chocolate.
  6. Return the coated cheesecake balls to the fridge until the chocolate hardens, about 30 minutes.

Notes

Make sure all ingredients are at room temperature for better mixing. Allow cream cheese to soften completely to ensure a creamy filling.
