A heavenly cake combining rich white chocolate and tart raspberries, perfect for celebrations or indulgent afternoons.

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 tsp vanilla extract
  • 4 oz white chocolate, melted
  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Add the softened butter, whole milk, eggs, and vanilla extract into the bowl and mix until smooth.
  4. Melt the white chocolate and fold it into the batter.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes.
  6. Whip the heavy cream with vanilla and powdered sugar until stiff peaks form.
  7. Frost one cooled cake layer with the whipped cream, adding fresh raspberries.
  8. Place the second layer on top and frost the entire cake.
  9. Decorate with extra raspberries and drizzle melted white chocolate over the top.

To enhance flavors, allow ingredients to reach room temperature before mixing. Avoid overmixing for a fluffy texture.
