Ingredients

  • 3/4 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg
  • 2/3 cup (160ml) unsulfured molasses
  • 1 teaspoon pure vanilla extract
  • 3 cups (360g) powdered sugar
  • 2 large egg whites or 3 tablespoons meringue powder mixed with 6 tablespoons water
  • 1/2 teaspoon vanilla or almond extract
  • Gel food coloring (green, white, and brown, optional blue)
  • Edible gold dust (optional)
  • Fine sugar or edible glitter

Instructions

  1. Whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, nutmeg, and salt in a bowl until well combined.
  2. Cream the softened unsalted butter and packed brown sugar together until light and fluffy.
  3. Add the egg, unsulfured molasses, and pure vanilla extract, mixing until combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring well until a smooth dough forms.
  5. Divide the dough in half, wrap in plastic wrap, and chill in the fridge for at least one hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the chilled dough to about 1/4 inch thickness and cut into shapes.
  8. Bake for 8-10 minutes until the edges are golden.
  9. Cool on baking sheets for a few minutes before transferring to a wire rack.
  10. Prepare the royal icing by beating egg whites until stiff peaks form, then gradually add powdered sugar and vanilla, mixing until smooth.
  11. Color the icing as desired and pipe onto cooled cookies.
  12. Finish with edible gold dust and glitter for decoration.

Notes

Allow the dough to chill longer for enhanced flavors. Use a kitchen scale for accuracy.
