  • 1 ½ cups graham cracker crumbs
  • ½ cup finely chopped pistachios
  • ¼ cup melted butter
  • 2 tablespoons sugar
  • 3 cups cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon lime zest
  • ¼ cup fresh lemon juice
  • ¼ cup fresh lime juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and halved
  • ¼ cup sugar (for topping)
  • 1 tablespoon lemon juice (for topping)
  • 1 tablespoon lime juice (for topping)
  • ¼ cup chopped pistachios (to sprinkle on top)

Instructions

  1. Preheat your oven to 325°F (163°C). In a mixing bowl, combine the graham cracker crumbs, finely chopped pistachios, melted butter, and sugar. Mix well until the crumbs are evenly coated. Press this mixture firmly into the bottom of a springform pan to create a sturdy crust. Bake for 10-12 minutes, then allow to cool completely.
  2. Beat the softened cream cheese until it’s smooth and creamy. Gradually add the granulated sugar, lemon zest, lime zest, fresh lemon juice, fresh lime juice, and vanilla extract. Mix until combined. Add the eggs one at a time, mixing gently to incorporate each before adding the next.
  3. Carefully pour the cheesecake batter over the cooled crust in the springform pan. Bake for 50-60 minutes, or until the center is slightly jiggly but not liquid. Turn off the oven and leave the door ajar, allowing the cheesecake to cool slowly for about an hour. Once cooled, cover and refrigerate for at least 4 hours, preferably overnight.
  4. Combine the fresh cherries with sugar, lemon juice, and lime juice in a saucepan over medium heat. Cook until the cherries have softened and released their juices, about 5-7 minutes. Remove from heat and let cool.
  5. Spread the cooled cherry topping over the chilled cheesecake and sprinkle with chopped pistachios before serving.

Notes

Ensure to soften the cream cheese for a smooth batter. Avoid overmixing after adding eggs to prevent cracks.
