  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup lemon pudding mix (instant)
  • 2 cups milk
  • Extra whipped topping for garnish
  • Lemon slices for garnish (optional)
  • Crushed pretzels for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the crushed pretzels with the melted butter and granulated sugar. Mix until well coated, then press firmly into the bottom of a 9×13 inch baking dish to form the crust. Bake for 10 minutes until lightly golden, then set aside to cool completely.
  2. Blend the softened cream cheese with the powdered sugar until smooth and creamy. Fold in the whipped topping, along with the fresh lemon juice and lemon zest, ensuring that everything is well combined. Spread this mixture evenly over the cooled pretzel crust.
  3. Whisk together the lemon pudding mix and milk until thickened. Spread the pudding layer evenly over the cream cheese filling.
  4. Cover the dish with plastic wrap and chill in the refrigerator for at least 4 hours.
  5. Slice into squares and top with extra whipped topping, and garnish with lemon slices and crushed pretzels if desired.
