A delightful loaf combining zesty lemon and sweet blueberries, perfect for breakfast or any gathering.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup plain yogurt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon flour (for tossing blueberries)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream together the softened butter and sugar until light and fluffy in a large mixing bowl.
  4. Add the eggs one by one, beating well after each addition until fully incorporated.
  5. Stir in the lemon juice, zest, and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the yogurt, mixing gently.
  7. Toss the blueberries in 1 tablespoon of flour and gently fold them into the batter.
  8. Pour the batter into your prepared loaf pan and smooth the top.
  9. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
