Delicious steak skewers glazed with a creamy peanut sauce, capturing the vibrant flavors of Thailand.

  • 1/2 cup creamy peanut butter
  • 1/3 cup tamari/soy sauce
  • 23 tablespoons Thai red curry paste
  • 1 tablespoon chopped pickled ginger
  • 1 tablespoon toasted sesame oil
  • 1/3 cup sweet Thai chili sauce
  • 6 cloves garlic, chopped
  • 1 tablespoon fresh grated ginger
  • 2 tablespoons chili paste (Thai curry or Gochujang)
  • 2 pounds flank steak, cubed
  • Rice or coconut rice (for serving)
  • Limes (for serving)
  • Avocado (for serving)
  • Sesame seeds (for serving)
  • Cilantro (for serving)

Instructions

  1. Make the Peanut Sauce: In a glass jar or blender, combine creamy peanut butter, tamari or soy sauce, red curry paste, chopped pickled ginger, and toasted sesame oil. Blend until smooth, adding water gradually to achieve desired consistency. Set aside.
  2. Marinate the Steak: In a bowl, mix sweet Thai chili sauce, additional tamari, chopped garlic, grated ginger, and chili paste. Add cubed flank steak and toss to coat. Allow to marinate for at least 10 minutes.
  3. Prepare Skewers: Thread marinated beef onto skewers, leaving space between each piece.
  4. Grill: Preheat grill to medium-high heat. Grill skewers, turning occasionally, until lightly charred and cooked to preferred doneness, about 8 to 12 minutes.
  5. Serve: Arrange grilled skewers over rice or coconut rice. Garnish with lime, avocado, sesame seeds, and cilantro. Serve with peanut sauce on the side.

Notes

For best flavor, marinate the steak longer. Use soaked wooden skewers to prevent burning. Enhance with grilled vegetables.
