A delightful dish with tender flank steak marinated in a rich peanut sauce that brings vibrant Southeast Asian flavors to your table.

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/3 cup tamari or soy sauce
  • 23 tablespoons Thai red curry paste
  • 1 tablespoon chopped pickled ginger
  • 1 tablespoon toasted sesame oil
  • 1/3 cup sweet Thai chili sauce
  • 6 cloves garlic, chopped
  • 1 tablespoon fresh grated ginger
  • 2 tablespoons chili paste (Thai curry or Gochujang)
  • 2 pounds flank steak, cubed
  • Rice or coconut rice for serving
  • Limes, sliced for serving
  • Avocado, sliced for serving
  • Sesame seeds for serving
  • Cilantro for serving

Instructions

  1. Combine creamy peanut butter, tamari or soy sauce, red curry paste, chopped pickled ginger, and toasted sesame oil in a glass jar or blender. Blend until smooth, adding water if necessary.
  2. Mix together sweet Thai chili sauce, additional tamari, chopped garlic, grated ginger, and chili paste in a bowl. Toss the cubed flank steak in the marinade.
  3. Thread the marinated steak onto skewers, leaving space between each piece.
  4. Preheat your grill to medium-high heat and grill the skewers for about 8 to 12 minutes, turning occasionally.
  5. Serve the skewers over rice or coconut rice and garnish with lime wedges, avocado, sesame seeds, and cilantro. Serve the peanut sauce on the side.

Notes

For best flavor, marinate the steak for at least 20 minutes or overnight. Ensure the grill is preheated to achieve a perfect char.
